Chamomile & Honey Panna Cotta
  • Bloom the gelatine: Place the gelatine leaves in a bowl of cold water and leave to soften for 5–10 minutes (or prepare the sachet as per instructions).
  • Infuse the cream: In a saucepan, combine the milk, cream, chamomile tea bags, vanilla, and sugar. Gently heat over low-medium heat until steaming but not boiling. Remove from the heat and allow the mixture to infuse for 10–15 minutes.
  • Strain and dissolve gelatine: Remove the tea bags, then return the mixture to a low heat. Squeeze out the softened gelatine leaves and stir into the warm cream mixture until completely dissolved.
  • Set the panna cotta: Pour the mixture evenly into moulds or serving glasses. Allow to cool to room temperature, then refrigerate for at least 4 hours, or until fully set.
  • To serve: Drizzle with honey and garnish with a few chamomile flowers for a delicate finish.
