Vegetarian Lasagna
  • Lay all the vegetables on a tray then drizzle with olive oil and season with salt and pepper. Roast in the oven at 210°C until cooked through then set aside.
  • In a baking pan, lay the first layer of the lasagna sheet. Spread the vegetables on top then add tomato sauce and mozzarella. Repeat the steps to make 1 or 2 more layers. Top it with more mozzarella cheese then bake in the oven at 200°C until cooked through and top is golden brown in color. Serve with grilled bread if desired.
