Three Bean & Cheese Tacos
  • Evenly spread 50g of Arla Pro Mature Cheddar into a 10cm diameter circle onto griddle or non-stick pan on a medium heat. Allow the cheese to melt and caramalise until golden.
  • Once golden and set, flip over and toast again until evenly caramelised. Remove and shape onto a taco tray and allow to cool.
  • To begin salsa, finely dice the tomato, chilli and coriander into a bowl with the mixed beans. Shave off the toasted corn and mix with extra virgin olive oil, lime juice and fajita seasoning. Season to taste.
  • For the guacamole, add all ingredients to a bowl and season.
  • Distribute the guacamole between the tacos and top with the salsa. Garnish with chilli pealrs, pickled red onion and coriander. Serve with a side dish of Skyr.
