  • Grate courgette into a tea towel and sprinkle with salt and let sit for 5 mins before squeezing the juice out.
  • Add the chopped herbs (dill & mint) to the courgette mix, with paprika, sumac, chopped garlic, add the egg and flour and mix.
  • Get a hot pan with olive oil, spoon two spoonfuls into the pan and flatten into a round patty.Once fried, Into one put on the cheese and the skyr. Take the other and flip on top of the cheese and skyr. Flip out onto a tray and put into an oven until cooked through.
  • To make the tsatskiki, spoon all the ingrdients together and season to taste. Serve the patty into a mediterranean style bun and serve with tsatsiki on the side.
