Rocket Salad Pizza

A rocket salad pizza is a great vegetarian choice to add to your pizza menu. The rocket gives a fresh peppery note, and the cherry tomatoes boost the tomato flavour of the pizza. It’s a simple, and yet delicious pizza. Enjoy!

    Dough
  • Dissolve the yeast in 90 % of the water. Add approx. half the flour and knead the ingredients together in a stirrer. Add the rest of the flour little by little while the machine kneads.
  • When the dough begins to accumulate after 4-5 minutes, add the salt and half of the remaining water.
  • When the salt is added, add the rest of the water and the oil little by little. Let the machine knead until the dough is smooth and elastic. The total mixing time should be approx. 15 minutes.
  • Let the dough rest for one hour at room temperature in a plastic container covered with clingfilm.
  • When the dough has rested, it is divided into 3 servings and the dough is stored in the refrigerator for 12-18 hours, where it becomes more than twice as large. Take the dough out of the refrigerator and let it get to room temperature before baking the pizza.
  • Making the pizza
  • This pizza is ideal for takeaway and delivery because most ingredients are added after baking. It reduces the risk of the pizza getting soggy and wet.
  • Start by stretching and molding your dough into a round pizza and spread out the tomato sauce with a tablespoon without touching the edge of the pizza.
  • Add the mozzarella and bake for 3-4 minutes at 350 ° C. When the cheese is melted and the crust is crispy, the pizza is taken out and decorated with a layer of arugula and cherry tomatoes.
  • Sprinkle with flakes of parmesan cheese, and drizzle with balsamic glaze.
