- Grease and line a 20cm cake tin with parchment for the signature shape.
- Infuse cream with Earl Grey by simmering and cooling.
- Mix cream cheese and sugar. Add sieved cream and eggs. Beat until smooth.
- Pour into tin and bake 30–35 mins, rotating every 10 mins for even top.
- Cool fully and chill overnight before slicing.
