Black Bean & Portobello Mushroom Burger With Castello Blue & Red Onion Marmalade

- For the burger patty, chop the mushrooms into small chunks (around 1-inch pieces), place in a tray and season with olive oil & salt.
- Bake at 180 degrees for 20 minutes, until the moisture from the mushrooms has evaporated. Once baked set aside and allow to cool.
- Once cooled mix the mushrooms, mashed black beans, diced red onion, Dijon mustard, breadcrumbs, cream cheese & egg, combining ingredients until the mixture is bound together.
- Use this mix to mould into patties (the mix will make between 6-8 patties).
- Pan fry the patties in a little oil, to colour on each side, then cook in the oven for 6-8 minutes to order.
- To make the red onion marmalade, place sliced onions in a pan then add all other ingredients and cover pan.
- Slowly simmer until onions have lost all water, reducing until you’re left with a jammy texture. Allow to cool fully before using.
- For the burger build, toast the burger bun and spread a spoonful of onion marmalade across the bottom of the bun.
- Add a Castello Blue Cheese Slice on top of burger patty and place under the grill to warm the cheese up.
- Place patty with melted cheese on top of red onion marmalade.
- Add a little salad (rocket or gem) and some Dijon mayonnaise to finish.
