Chocolate mousse with chilli, mint and blackberries
- Soak the dates in orange juice for a few hours. Chop dates and the orange juice, along with the chilli, in a food processor until you get a smooth, uniform mass. Add the egg yolks and whizz for about 5 min. until light and foamy. Melt the chocolate over a water bath. Quickly combine the melted chocolate and date mixture in a bowl. Fold in the whipped cream until combined. Carefully fold in the beaten egg whites. Pour the chocolate mousse into a large serving dish so there is a large surface for arranging the berries before serving. Or pour the mousse into small dishes for individual servings. Refrigerate the mousse overnight. Combine the berries with the chopped mint and sprinkle over the chocolate mousse.
