Lamb and Feta Burger
Sink your teeth into a juicy lamb burger crowned with tangy feta. Mediterranean flavour in every bite.

- Finely dice the red onion and place in a preheated skillet with 2 tbsp oil. Saute on low heat until slightly tender and pour in balsamic vinegar. Reduce the balsamic until a syrupy consistency, remove from heat and set aside to cool.
- Small dice the tomato and cucumber, sprinkle with 2 tsp salt and place in colander inside a bowl to drain. When ready for assembly discard liquid and drizzle with olive oil.
- In a mixing bowl combine lamb, eggs, bread crumb and cooled onion mixture. Thoroughly mix until homogenous. Portion into 4 equal sized burger patties and place in refrigerator.
- Blend the cheese, yoghurt, cilantro and salt and taste for seasoning.
- Grill burgers on medium heat for approximately 5 mins a side or until internal temperature of 140 is achieved.
- Assemble burger by spreading both top and bottom of bun with feta sauce, place burger and top pattie with vegetable mixture.
