Chef Roy began his culinary journey as a captain at a steakhouse following his formal education at Shih Chien Catering University in Taiwan. However, he traded the front lines of the restaurant for the kitchen soon after, and embarked on a culinary journey that has taken him to some of the best Italian restaurants in the country.

Now the Head Chef of Trattoria di Primo in Dachi, Chef Roy is still continuing his foray into Italian cuisine, utilising his skills and knowledge to lead his team and restaurant to new culinary heights. With cheese a signature ingredient and accompaniment in Italian cooking, we asked Chef Roy to touch on the subject of cheese in his kitchen and the many ways he utilises this essential dairy product.
