Lime Sour Cream Loaf, “Lof Limau Nipis”
    Procedure
  • Preheat oven to 170 °C.
  • Grease two loaf tins and line base with parchment paper.
  • Combine Arla Pro Whip & Cook, lime zest and lime juice and leave to curdle.
  • In a large bowl, combine Lurpak Slightly Salted Butter and sugar and cream together at high speed until creamy and fluffy.
  • Add eggs in one by one. Beat for a few seconds after each egg, making sure each is fully incorporated before adding the next.
  • Sift the flour, baking powder and soda bicarbonate together.
  • With mixer on low speed, gradually add the flour mix until the flour is combined. Do not over-beat.
  • Lastly fold in the lime and cream mixture.
  • Pour into two loaf tins and bake for 35-45 minutes until golden. Test with a skewer, make sure it comes out clean.
