Creamy Tomato Pasta
- 1. In a medium saucepan, sweat onion with butter over medium heat until soft.
- 2. Add garlic, tomatoes with juices and salt.
- 3. Bring to a simmer and cook, uncovered, at slow steady simmer, adjusting the heat as necessary, for about 45 minutes, or until droplets of fat float free from the tomato.
- 4. Stir occasionally, mashing any large pieces of tomato with the back of a spoon.
- 5. Meanwhile, cook pasta in salted water as per packet instructions.
- 6. Add cream to the tomato sauce, stir to combine and turn up the heat to bring to a slow simmer.
- 7. Add drained, cooked pasta to the sauce. Toss to combine with the sauce.
- 8. Taste and adjust seasoning with salt & pepper.
- 9. To serve, garnish with basil leaves and a drizzle of olive oil (plus some grated hard cheese, if desired).
