Classic potato salad gets a smoky upgrade with rich cheddar. Creamy, tangy, and a must-have for any spread. This salad goes as a great accompaniment to grilled salmon with a fresh fruit salsa

Smoked Cheddar Potato Salad

    Instructions

  • Place potatoes in a large pot and cover with water. Add 3 Tbsp salt and turn on high heat.
  • Once water in boiling turn heat down to a low simmer. Cook potatoes until fork tender and strain allowing to cool on a tray.
  • Prepare veggies by finely dicing the celery and onion. Finely slice the fresh herbs. Place into a large mixing bowl with the shredded cheese.
  • In a food processor place mayo, lime juice and zest, chipotle, garlic and honey and blend until smooth.
  • Once potatoes are cool, cut into 3⁄4 inch pieces and mix into the veggies, herbs and cheese.
  • Season the veggie mix with salt and pepper.
  • Add dressing and adjust seasoning accordingly.
