Jalapeno Havarti Queso

Turn up the heat with this gooey queso made with jalapeño havarti. Spicy, melty, and made for dipping.

    Instructions

  • In a medium pot cook the sausage (casings removed) trying to break it up as much as possible. Strain out with slotted spoon leaving fat and oil.
  • Add the diced jalapeno (seeds removed) and shallot and cook on medium low heat until slightly soft and fragrant. Remove from pot and add to cooked sausage.
  • In the pot add lemon juice and little bits a time of baking soda until you stop seeing a reaction (bubbles). Alternately just add the sodium citrate.
  • Add milk and bring to a gentle simmer.
  • Whisk in the grated cheese careful not to add too much at a time dropping the temperature too much.
  • Once all the cheese has been incorporated add in cooked sausage, veggies, and lime juice.
  • Serve and enjoy.
