Brighten any spread with skewers of sweet watermelon and salty feta. Refreshing, juicy, and a summer standout.

Grilled Feta and Watermelon Skewers

    Instructions

  • In a mixing bowl prepare the vinaigrette by combining oil, vinegar, honey, salt, chiffonaude mint and finely sliced green onion.
  • Prepare skewers by cutting 1.5 inch cubes of both watermelon and feta.
  • Preheat bbq on high heat.
  • Grill skewers for 90 secs per side (2 sides) and remove from heat. Goal is to achieve coloured grill marks on watermelon and feta while gently warming. But not enough to melt the feta.
  • Place on serving tray and garnish with a generous amount of vinaigrette.
