Chorizo Smoked Cheddar Sliders

Turn up the flavour with juicy chorizo sliders smothered in smoky cheddar. Big taste packed into every bite-sized bun.

  • In a heavy bottomed sauce pot heat olive oil until hot but not smoking. Add in cherry tomatoes. Cook until browned on bottoms and give a good stir.
  • Add sugar and vinegar reduce heat to low and simmer until a jammy consistency. Remove from heat and allow to cool.
  • While tomato jam is cooking mix ingredients for sliders in a mixing bowl. Season with salt and pepper to your liking.
  • Form meat mixture into 8 same sized patties about 1.5 cm thick.
  • Prepare buns with tomato jam on top of bun and garlic aioli and sliced avocado on bottoms.
  • On a medium high heat grill cook sliders patties for 3 mins a side or until internal temperature of 160 degrees. Assemble burgers and enjoy.
