Smoked Salmon Mascarpone Pasta

Silky pasta is tossed with smoked salmon and a creamy mascarpone sauce for a luxurious, melt-in-the-mouth dish. Elegant, fresh, and perfect for any occasion.

    Instructions

  • Bring a large pot of salted water up to a boil. Add penne and cook approx. 9 mins or according to package. Reserve 1 C pasta water then drain pasta. Sprinkle pasta was a little oil and reserve to the side.
  • In a heavy bottom sauce pot on medium heat add finely diced shallot, garlic and lemon zest. Once a little browned deglaze pan with white wine and lemon juice. Reduce by half.
  • Add in milk, pasta water, and kale and bring to a low simmer for 5 mins.
  • Toss in pasta, salmon, and mascarpone a stir well. Adjust consistency with added pasta water or additional mascarpone.
  • Season to taste with salt and freshly cracked pepper.
