Ricotta Gnudi
Soft and delicate, these ricotta gnudi are a pasta lover’s dream. Made with extra smooth ricotta and Parmigiano Reggiano for melt-in-your-mouth goodness. Gnudi in Italian means “naked”. It is a close cousin of gnocchi with a lighter fluffier texture. These delicate cheese flavoured dumplings go well with any sauce you would use with its potato comprised cousin.

- In a mixing bowl combine all ingredients.
- Mix until the mixture forms a ball of dough. Try your best not to overmix as this can create toughness in your dumplings.
- Divide dough into 6 equal pieces.
- Roll each piece on a lightly floured surface into even logs with the diameter of about 2 cms.
- Cut logs into even sized dumplings trying to match the width with the diameter.
- Gently place dumplings into a pot of lightly boiling salted water.
- Bowl for 3 mins and add to your favorite sauce.
